Eugene McGovern, b. 1944

Track 1: Background in Belfast, qualification in Catering from Cathal Brugha Street College, Dublin. First post in Shannon Airport, followed by Jury’s Hotel, then in 1976, secured the post of Executive Chef at Trinity College Dublin. Memories of three years spent in this post, including management of staff, dealing with suppliers, and catering for large student numbers. Track 2: In 1979 moved to a post with CERT, the training agency, where his role and responsibilities included quality control in hotels around Ireland. Track 3: Returned to Trinity in 1990 as Head of Catering. Memories of Betty Pickering, his predecessor, who was regarded as something of an institution in Trinity. Discussed the changes over the years to catering equipment and facilities, and differences over time in students’ attitudes to food. Track 4: Observation of a decrease in the numbers of people eating in Commons, both academic staff and students. Anecdotes on organising formal dinners for visiting celebrities. Retired in 2010.
